Mushroom Stuffed Iowa Chops



  1. To make stuffing: in 10-inch skillet over medium heat melt butter and cook mushrooms, stirring occasionally. Remove from heat. Stir in onions, parsley, lemon juice, sage and pepper.
  2. Make a pocket in each chop by cutting horizontally from fat side to bone. Fill each chop with 1/4 cup of the stuffing, pressing firmly into opening. Secure with toothpicks. Brush chops with oil. Rub thyme over chops.
  3. On grill, place chops directly above medium coals. Grill, uncovered, 35 to 40 minutes or until well-done, turning and brushing often with Open Pit Original Flavor Barbecue Sauce during the last 20 minutes.

Suggestions: Use this flavorful stuffing in boneless chicken breast by following the same procedure.
